I thawed some chicken for dinner but was not feeling like standard oven baked or grilled chicken. So I got creative; went through the fridge and found some basil, mozzarella and tomatoes. The chicken turned out amazing! And it was so easy.

Serves 2
2 chicken breasts
1/4 cup diced tomatoes
2 tbsp fresh basil
1/4 cup mozzarella
balsamic vinegar
1 tbsp olive oil
salt and pepper
garlic powder

Preheat the oven to 350 degrees

Spray non stick spray in a medium casserole dish.
Butterfly the chicken breast (slice it in half lengthwise, but don’t cut it all the way through). Top one side of the chicken with half the basil, cheese and tomatoes and drizzle with a little balsamic vinegar. Close the other half over the mixture. Drizzle with olive oil, sprinkle with salt and pepper and garlic powder. Do the same for the second chicken breast.

Bake for 20-25 minutes. Or until chicken is cooked and almost golden brown. Serve immediately.

I served it with mushroom risotto and steamed broccoli.
