I made a casserole dish of my healthy-er macaroni and cheese the other night and had tons of leftovers. I hate throwing leftovers away. So I kept them in hopes of having an excuse to have to be creative and turn it into another dish. Fried Macaroni and Cheese balls are the outcome of that experiment. They are extremely easy. And since the macaroni and cheese is already cooked, it is really just a matter of assembling them.

Serves 6-8
3 cups macaroni leftovers
3 eggs
1/2 cup bread crumbs
1/2 cup panko bread crumbs
1/4 cup parmesan cheese
1 tsp dried oregano
salt and pepper
olive oil
a jar of your favorite marinara sauce

Pour enough oil in a medium frying pan to fill about 1/4 inch. Heat the oil.

Mix the bread crumbs, panko crumbs, oregano and parmesan in a bowl.
Beat the eggs in another bowl.

Roll a small handful of mac and cheese into a ball. Roll each ball in the bread crumbs mixture, then in the eggs, then back into the bread crumbs. Place in the frying oil. Fry in small batches so you can pay close attention so they don’t burn. Fry on each side for about 2 minutes. Remove from pan and place on a napkin to soak up some of the grease. Serve warm with a bowl of marinara sauce for dipping.
