Oh man, this pizza makes my mouth water. It engages all the tastebuds; sweet, savory, fresh, chewy, crunchy, soft. Ahhh, it is amazing!
This recipe make enough for 1 personal size pizza. Which is enough food for 2 girls (assuming there is dessert to follow).

Cranberry, Apple , Brie and Onion Pizza
3 tbsp trader Joe’s Cranberry Apple Chutney
1 wheel Goat’s Milk Brie Cheese
1 red onion, thinly sliced
1/2 apple thinly sliced
5 mint leaves, julienned
1 tsp minced garlic
1/4 recipe basic pizza dough
2 cups arugula
2 tbsp dried cranberries
1 tbsp silvered almonds
1 tsp apple cider vinegar
Olive Oil

Caramelized the onions in 2 tsp olive oil over medium heat. Add the sliced apples right before the onions are completely caramelized. Set aside.

Mix the arugula, dried cranberries, almonds, 1 tsp olive oil and 1 tsp cider vinegar in a small bowl, set aside.

Spread the cran/apple chutney on the cooked side of the crust. Top with the onions/apple mix and the sliced brie. Sprinkle the minced garlic on top. Close the grill and cook for 3 more minutes.
Remove from the grill and place on a cutting board. Using a pizza slicer, cut into 4 pieces. Sprinkle with the mint, and top with the arugula salad.
