I think this is the most popular salad at potlucks. It is easy, cheap, unhealthy and can be made in advance. All things perfect for a potluck dish. Also all things perfect for a white trash party, which is why I made this salad. Now I am gonna be honest, I like the flavor of the salad. The sweet, savory and crunchy. And you can let the salad sit at room temperature with the dressing on it for hours and it won’t go bad. The cabbage and noodles absorb the dressing the longer it sits, so it actually starts to taste better the longer it sits (by longer I mean a few hours, not a few days). Next time you are asked to bring a salad to a potluck, try this, people will like it!

Serves 10-15
1 head cabbage (or use ice berg lettuce, just wait to pour on the dressing until right before serving)
2 carrot sticks, grated
4 bunches green onions, chopped
1 can Mandarin oranges, drained
2 bags ramen noodles, any flavor ( do not cook them, and do not use the seasoning)

2/3 cup sugar
2 tbsp apple cider vinegar
3 tbsp rice wine vinegar
1/2 cup vegetable oil

Whisk the dressing together in a bowl. Let the dressing sit for at least 3 hours before pouring it on the salad. You will notice the sugar slowly dissolves as the mixture sits. You can let it sit out at room temperature overnight.
*Do not refrigerate the dressing.

Mix all the salad ingredients in a large bowl. About 1 hour before serving, mix in the salad dressing. You can refrigerate it at this point.

Take it out of the fridge and serve chilled.
