What is the deal with this muffin kick I’m on? It’s probably because they’re easy, versatile, and flexible.

I can whip up a batch of muffins in 30 minutes, out of the oven.
Any flavors are welcome.
Even if I forget the salt or vanilla, they still turn out great.

Oh, and they are also so easy to transport. I bring lots of my baked goods to work and transporting can sometimes be a problem because I am not a bakery so I don’t have all the fancy boxes. I have different sized plates with saran wrap and tin foil, fancy, I know. And muffins just don’t care if you throw them in a ziplock bag, on a plate, or in a fancy box. Either way, they still look good and taste good.

I made these muffins for a video game tournament my husband was playing. Don’t judge.
It was a FIFA (soccer) video game tournament with 16 guys. They chose their partner through a random drawing, then chose teams. They planned for MONTHS! It was quite funny to watch their excitement build as the day became closer and closer. I couldn’t send him empty handed. I mean, these guys needed to keep their energy up with their thumbs and index fingers were worked to the bone. He said these muffins were very well liked, and when bunch of guys like muffins, that’s a good sign. No, the guys aren’t super picky, but a muffin is sorta like a chick breakfast. They just have this weird perception of it. Whatev, they liked it, no, they said they loved them.

1 cup whole wheat flour
1 cup all purpose flour
1/2 cup vegetable oil
3/4 cup brown sugar
2 eggs
2 large bananas, mashed (over 1 cup worth)
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup white chocolate chips
1/2 cup mini chocolate chips

Mix the oil, eggs and sugar in a bowl. Add the bananas and vanilla extract.

In another bowl sift the flours, baking powder, baking soda and salt.

Add the dry mix to the wet mix and mix with a wooden spoon until it is just incorporated. Fold in the chips. Fill the lined muffin tins almost all the way to the top.

Bake for 20-25 minutes, until a toothpick inserted comes out clean. I would suggest allowing them to cool on a wire rack, but let’s be honest, you will want to eat these immediately because they taste so good.
