So I may overwhelm you with pumpkin recipes this season.

2 weeks ago when I FINALLY found pumpkin in a grocery store, I first did a little dance, then I bought a few cans. No plans on what to do with my treasure. All I cared about was that I finally had some in my possession to use at my discretion. Unfortunantly baking didn’t sound very fun at the moment. I don’t know, maybe I was feeling lazy, or tired, or hot (we did have a heat wave last week that was BRUTAL!). Whatever the case, a nice cold smoothie sounded good. I was a little hesitant to make a pumpkin smoothie, but I LOVE pumpkin, so it couldn’t be that bad, right?
What a treat! The spices and the creaminess of the smoothie, perfect for a southern california fall day.
Makes 1 smoothie
3/4 cup plain yogurt (I used non fat)
1/2 cup pumpkin puree
1/2 banana
1 cup ice
1 tbsp agave nectar
dash of each to your liking: cinnamon, nutmeg, ginger, all spice
I don’t remember where I read it, I think in a magazine somewhere, but I read about how to layer a smoothies ingredients in a blender to achieve optimal blending perfection. Duh, I knew there had to be a science behind smoothie perfection.
Add to blender in the following order:
Yogurt
Pumpkin
Spices
Banana
Ice
Blend. Pour. Drink. Enjoy.

I just made this and am drinking it right now. SO good! The only things I changed was I used nonfat plain greek yogurt and for spices I used pumpkin pie spice. It is definitely a repeat!
