My baby is almost 3 weeks. Holy ding dang, time really does fly. But then again, it seems to move so slow at 4 am when all we want to do is get her back to sleep. In general though, this time has gone by SO quickly! And in just 3 short weeks it’s crazy how much she has grown. She has grown almost 2 inches already and about 1 lb. She’s a whopping 7 lbs now. So tiny!

No, my blog won’t become dedicated to my little Waverly, but come on now, she is my first child, my daughter. I’m a little excited and pretty proud! Here is a picture we took when she was 14 days old. Love the chubby cheeks she is getting!

Oh, and about this chocolate loaf. Well, it’s SUPER tasty!!!! An extremely easy way to enjoy chocolate cake that isn’t difficult, pretentious or fancy. Simple and DELISH! And right now, with adjusting to our new schedule, simple and delicious are much appreciated.

1 1/2 cups flour
1/2 cup cocoa powder
2 eggs
3/4 cup sugar
1/2 cup vegetable oil
1 cup sour cream (I used light)
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup chocolate chips

Preheat the oven to 350 degrees and grease an 8 inch loaf pan.

In a large bowl sift the flour, sugar, baking powder, baking soda and salt.

In another bowl whisk the eggs, oil, sour cream, and vanilla.

Add the liquid to the dry mixture. Mix just until incorporated, and add chocolate chips, don’t over mix. I only used maybe less then 15-20 stirs. Pour the batter into the greased loaf pan.

Bake at 350 degrees for 60-70 minutes, until a fork inserted comes out clean. Cool for at least 15 minutes in the pan before cutting and serving.

Serve warm with some ice cream, fresh berries and fresh whip cream, freaking YUM! I didn’t have time to take a picture of it with all the fun stuff added because I was so excited to eat it.
