Duh, of course I’m his daughter. But I say this because if my dad could customize a food pyramid, it would look something like this:

equal parts tortilla chips and cheese

That’s it. Only 2 food groups with equal portions of each. He loves him some nachos and well,So.Do.I!

Here’s my beef with nachos though: Not every bite is created equal.

You have the top chips that are covered in all goodness, and the bottom chips you end up dipping in a side dish of salsa because they don’t have any toppings on them. To remedy this problem I made individual nacho bites. Each chip has the perfect balance of everything. These are a great appetizer, assuming you aren’t feeding TOO many people (since each chip requires individual attention). I made them for 4 of us one night, and we DEVOURED an entire tray, QUICKLY! In between each bit I think we all made comments about how perfect each chip was. Ya, these were a hit to say the least!

For your Cinco De Mayo celebration try some cookies and margaritas too. Does it get any better then nachos, cookies and margaritas? Not really.

Ingredients
tortilla chips
cooked chicken, diced
shredded cheddar cheese
sour cream
guacamole
salsa
cilantro

Preheat oven to 400 degrees.

Line a baking sheet with tin foil (this just makes clean up easier). Lay chips in a single layer on the baking sheet. Top each chip with chicken and cheese. Bake for about 10 minutes, until the cheese is melted.

Top each chip with sour cream, guacamole and salsa, then a cilantro leaf for garnish.

Serve on a platter, or shoot, just eat them right off of the baking sheet.
