I have been LOVING my Vitamix. I’d be totally ok if I lost all of my teeth and I had to blend all of my meals, because that would mean using this bad boy even more then I already do. Since getting my Vitamix I’ve gotten really creative and exploratory with new recipes.

For instance, for dinner I made a tomatillo salsa AND a peanut satay in the Vitamix. And a huge tray of veggies and chips for dipping. It was delicious!

So that was dinner. But what about for breakfast, lunch, snacks, and drinks? Yep, I’ve used my Vitamix for those too! I even used it to make dessert a few weeks ago. I’m kinda obsessed with it.

This is a dairy free recipe, with the exception of the whip cream. I’ve been adding a little dollop of whip cream to pretty much everything. Why? Well, when you send your husband to Costco and write ‘whipping cream’ on the list, he assumes the stuff in the can. When he comes home all proud that he got everything on the list, I don’t say a word.

He’s not wrong, he did get whipping cream, just not the kind I wanted. So now, I add canned whipped cream to everything and I still think I might have these 3 cans for the next 5 years.

Raspberry Mocha Frappaccino
Serves 1 (yes, I eat an entire pint of raspberries in 1 sitting)

1/2 cup soy milk
1/2 cup EXTRA strong brewed coffee (cooled)
1 pint raspberries (6 oz)
1 tbsp cocoa powder
1 tbsp agave
ice (about 1 cup)

Put all ingredients in your Vitamix (or blender, obviously) and blend on low for 30 seconds, then on high until it is completely smooth, about 1 minute. Pour into a glass, add a touch of whipped cream, a raspberry and sprinkles, for good measure ;)

A couple notes:
1. Use whatever milk you like: soy, almond, regular.
2. Frozen raspberries work the best, but room temp are just fine too.
3. Add extra cocoa powder or agave for your taste preferences.
