There are flavors and textures are just meant for each other. The obvious chocolate and peanut butter, chips and guacamole, the whole sweet/salty combo, etc… But sometimes you don’t realize a match made in heaven until you’ve accidentally stumbled upon it… and then a lightening storm goes off in your brain and you can hardly comprehend what’s going on inside of your mouth.  Ya, that.  With these tacos.

Hearty fluffy eggs.

Creamy tart goat cheese.

Smoky flaky salmon.

Buttery smooth avocado.

Fresh peppery cilantro.

I mean honestly, the flavor combo is serious.  Seriously awesome.

I treated myself to these tacos on a weekday morning, but, I imagine they’d make a fantastic weekend breakfast (or brunch).  They don’t take any more time to make than it would take to whip up some eggs and bacon… but the final product is way better.  And it’s sorta fancy too… makes you feel like you’re eating at a snazzy little restaurant, but for a fraction of the cost.  Enjoy them with a cup of coffee on a Wednesday morning, or with a mimosa for Sunday brunch.   Shoot, make them for dinner!  Just make them!

Breakfast tacos are so incredibly easy, which is yet another reason they’re perfect for almost any meal, any day of the week!  There isn’t really a recipe for them, per say.  It’s more about adding the amount of each ingredient that suits your preference.  Here’s the ratio I used for each taco (figure about 3 tacos per person):

1 taco:

1 corn tortilla

1 egg

1 tbsp smoked salmon

1 tbsp crumbled goat cheese

2 slices avocado

1 tbsp cilantro leaves




Smoked Salmon Breakfast Tacos


  • corn tortillas, warmed
  • eggs, scrambled
  • smoked salmon
  • goat cheese, crumbled
  • avocado, sliced
  • cilantro
  • lime


Layer the ingredients in the corn tortilla in the order listed. Serve immediately and enjoy.
