Remember that one time I made whipped feta and dipped strawberries in it? Ya, I basically fell in love. I realize some people can’t mentally get over the idea of a super salty cheese, like feta, combined with super sweet juicy strawberries. You.Crazy. Get over it, try it. And then try the whipped feta with hummus and roasted garlic. Ya, I fell in love all over again. Proof that the heart always has more love to pour out.
I brought this dip to a friends house for a BBQ, and it was a hit. Even a toddler loved it. Not my toddler, ya right, that kid wouldn’t come within 10 feet of this… unless I put sprinkles on it, then she MIGHT consider it. If you have a picky eater, you understand the ‘I put sprinkles on broccoli’ idea. Anything to get them to just EAT! Anyway. This dip is an excellent choice to bring for a party, potluck, or any kind of shin dig. Someone always brings some sort of hummus, ever notice that? So why not bring a version that’s homemade, with a fancy whipped feta and roasted garlic flair!
Whipped Feta and Roasted Garlic Hummus
- 2 cups hummus (store-bought or homemade)
- 1 batch whipped feta
- 1 bulb roasted garlic
- garlic bulbs (however many you want to roast)
- olive oil
Preheat the oven to 400 degrees.
Peel away the outer layers of the garlic skin (just all that extra flaky stuff), leave the skins of the individual cloves on. Cut a 1/4 inch off the top of cloves, so a little of each individual clove is exposed.
Place the garlic heads in a baking pan, cut side facing up. Drizzle olive oil over each head, make sure the top of the exposed garlic is well coated. Cover with tin foil.
Bake at 400 degrees for 30-35 minutes, or until the cloves feel soft and are darker in color.
Allow the garlic to cool just enough so you don’t burn yourself when you touch it. Remove the skin from each clove (the garlic should easily pop out of it’s skin).
Store the peeled roasted garlic in an airtight container for up to 1 week.
Whipped Feta and Roasted Garlic Hummus:
spread the hummus in a dish, then spread the whipped feta on top, sprinkle with chopped roasted garlic. Serve with pita chips and veggies.
